Avocado Truffles

If you’re a chocoholic, like me, you know the struggle of balancing your chocolate with your guilt. Luckily, I came across a recipe about a year ago that made that balance a lot more manageable.

Avocado and chocolate might sound like a weird combination at first, but that first bite will have you singing a different tune.
To make them, you only need 2 ingredients!

1 Avocado
6 ounces semi-sweet chocolate.

Melt your chocolate in a double boiler. (If you don’t have a double boiler, just heat a pot of water on the stove and put another pot or glass bowl over that.)20170331_181028

Once your avocado is mashed and your chocolate is melted, go ahead and combine them.20170331_181315

Mix them together until it is as smooth as you can get it. (Mine always has some lumps).20170331_181536

At this point, you can go ahead and chill your mixture, or you can separate it out into equal parts and then chill it.20170331_181912
Just use whatever you have on hand.

Once chilled (at least an hour in the fridge), go ahead and roll them into perfect little spheres. (Remember the cake pops?)20170331_210339Perfection.
Your hands are going to get really messy during this step. Like REALLY messy.

Now chill them again. Another hour or overnight; whatever you prefer.

When you’re ready, take them out and coat them in cocoa powder.20170401_142445

You could eat them at this point, but the cocoa powder will probably find it’s way right into your lungs, so I think it’s best to get rid of the excess powder. The easiest way I have found is to toss them into a sieve and tumble them around.20170401_142536
You could also brush them off with a bbq brush if you want.20170401_142548

And you don’t have to feel too bad about it.
